Earth Week

Earth Day is celebrated every April 22nd of the year, to inspire awareness and appreciation for Earth's environment.Many cities extend the schedule of Earth Day observance to an entire week, usually starting on April 16th and ending on Earth Day April 22nd. These events are designed to encourage environmentally aware behaviors, including increased recycling, improved energy-efficiency and reduction in disposable items.
Vancouverites, celebrate from the entire week of April 18th to the 26th . Stores give away free eco-friendly shopping bags to increase customer awareness about the environment.



Chefs try to do their part by incorporating earth-friendly produce and ingredients on their recipes and menus. A lot of restaurant adopted the sustainable seafood program otherwise known as Oceanwise, highlighting local cuisine and ingredients.

Grandma's Birthday

Yesterday we celebrated my Mom's Birthday ,and we decided to get a take-out at "New Hong Kong Kitchen ", this is our all time favorite place for delicious chinese food and my favorite the Dry Garlic Spareribs is just top-notch. For take-out ,we always order the combo dinner "B" for two ,which includes the soup of the day, spring rolls, dry garlic spareribs, chicken chop suey and beef chow mein, of course the traditional fortune cookies is always there.

Easter Celebration

The Christians celebrate the resurrection of Christ on Easter Sunday.The Pagans though celebrate the changing of the seasons and the renewed life of earth at this time of the year.


Easter Celebration is one of the most important Christian festival in many countries and food is of huge symbolic importance. From fasting during lent to sumptuous family feast on Easter Sunday, there's a wealth of culinary specialties to discover.


Coloring eggs in bright colors- represents the sunlight of spring , the joy and happiness it brings.


Rabbit or the Easter Bunny is another traditional symbol of easter, known for it's fertility and symbolises new life, new beginnings.

Supreme Toro

The Tuna has two main cuts. The regular tuna and tuna belly (fatty tuna). Fatty tuna commonly known as toro is a rich section of the tuna that is enjoyed by many sushi lovers around the world. Toro refers to the belly section of the blue fin tuna which has a higher fat content than the rest of the tuna.The tuna belly sections are more expensive than the regular cuts since they are highly valued these days and they only consists of 15 to 20% of the whole tuna.It is classified into three sections: medium(chutoro), regular (toro) and supreme (otoro).

Tuna belly or toro is considered the king of sushi ingredients.Only a small portion is available per tuna , it is high in omega 3 oils.The best tuna belly will literally melt in your mouth, and this can be experienced with an otoro or what they call the supreme tuna belly , in my case i call it The Supreme Toro.


Supreme tuna belly is the lowest section of the tuna belly and is the highest in fat content. It is often confused with the regular tuna belly and are commonly thought as the same section of tuna. Compared to a regular tuna belly, it is distinctly more marbled and lighter in color.

Supreme tuna belly is priced for its scarcity at the fish market, auctioned price can become ridiculously high on some days with few tuna catches. For these reasons it is rarely seen at local sushi restaurants everyday.

It is best eaten at it's raw natural state, some of my favorite preparations for the Supreme Toro are: sashimi, nigiri sushi ,toro tartare with osetra caviar , toro toban yaki (sizzling toro on a hot plate) and seared toro with wakame-miso sauce.

Chicken Legs - Three Ways

One thing i like about my career is the intense energy and excitement i get in creating a new dish and and at the same time learning something new. Becoming a chef is an everyday learning experience.

Even at home a lot of times my mind is still working about creating new things and trying different ways . Like this this one time, we only had three chicken legs drumsticks for our dinner and i came out with preparing it in three ways: Vietnamese-style Chicken legs Sausage , Chicken Legs Cordon-Bleu & , BB-Q Chicken Legs stuffed with mushrooms & scallions.
