i've been requesting my wife for quite some time about us having a lechon kawali for dinner and so i bought a slab of pork liempo (pork belly) at chinatown and she came up with this oven roasted recipe instead of the traditional deep-frying it in a kawali.

Wow! Your wife's lechon looks incredible! Any chance sharing her recipe with us? The crackling on my roast pork belly is something of a hit and miss - sometimes it comes out fantastic, sometimes not as crisp and brittle as I like.
